Yellow plum - Tropical - Thyme

This is 100% Macabeu, fermented in clay amphora on skins, with a 21 day maceration before further aging in amphora. It pours a hazy golden colour, with notes of yellow plums, thyme, some tropicality and a hint of smoke.
