Crème de cassis - Plum - Spice
At Broc Cellars, all wines are made using spontaneous fermentation, using the native yeasts and bacteria that exist on the grapes. Nothing is added, aside from the occasional touch of SO2, depending on the wine and style. The grapes they work with are grown without using synthetic pesticides, herbicides, fungicides or fertilisers.
Here, the Trousseau and Zinfandel grapes for the 2021 vintage were 100% destemmed and fermented together in open top stainless fermenters. After pressing, the wine was moved into concrete tank for 6 months, then bottled unfiltered. You'll find aromas of crème de cassis and notes of of plum skin and spice on the palate.
