Insolente's journey started three generations ago, when the vineyards of the house grapes were given to the cooperative social cellar, with a small part retained for self-consumption by the Elettri family. Located in Soave in Monteforte d’Alpone, in the hillside vineyards of Garganega, the vines are more than 50 years old, dispersed in heterogeneous soils which allow a wide expression of very different identities. 

This wine comes from a 70-year old vineyard where, at the optimum time of the season, the grapes are handpicked upon reaching perfect maturation. The bunches are stemmed, soft pressed and spontaneously fermented in cement tanks after resting for 12 days at room temperature. It is racked and rests on the fine sediments until May, when the wines get bottled and Garganega must is added for the second fermentation.
