Destijds gaven de lokale bewoners het deze naam omdat het dak bedekt is met grijze leisteen, terwijl geglazuurde dakpannen gebruikelijker zijn in Bourgogne. De naam is tot op de dag van vandaag niet veranderd. De wijnstokken zijn aangeplant op terrassen op een hoogte tussen 260 en 330 meter. De percelen aan de voet van het chateau produceren Nuits-Saint-Georges 1er Cru Château-Gris rood, terwijl de hoger gelegen percelen zijn beplant met chardonnay. Zij produceren deze Nuits-Saint-Georges “Les Terrasses”, een zeer zeldzame wijn, aangezien minder dan 4% van de Nuits-Saint-Georges-wijnen wit zijn. Na de manuele oogst vergist en rijpt de wijn 14 tot 16 maanden in eiken vaten, waarvan zo’n 25 tot 35 % nieuwe vaten zijn.
