VITICULTUUR:
🌿 De wijnstokken worden geleid langs draden waarbij gebruik wordt gemaakt van een traliesysteem. Ze worden gesnoeid om zo één enkel klimspoor te bekomen. Dit heet de cordon royat unilateral. 4.115 wijnstokken per hectare
✋🚜De druiven worden geoogst in september. Manuele sortering in de bodega.
VINIFICATIE:
🍷 Koude voorgisting gedurende 3 dagen. Fermentatie aan 28°C in temperatuurgecontroleerde 'tinajas'. Dit zijn vaten van 16.000 liter in Franse eik. Maceratie op gistbezinksel gedurende 15 dagen. Malolactische fermentatie in nieuwe vaten van Franse eik. Daarna worden de beste cuves geselecteerd en geassembleerd.
⌛De wijn rijpt 14 maanden op zijn bezinksel in zorgvuldig geselecteerde nieuwe vaten van Franse eik.
