An excellent introduction to mixed rind cheeses: Rang des les is fairly mild, with notes of burnt sugar and scalded milk. Pair with an aromatic and flavourful wine, dried fruit, and nuts. Enjoy as a part of a charcuterie board, or melted into a cream sauce.
