Blue Steel #2 offers superior wear resistance compared to White Steel, making it highly valued by chefs who require sustained edge performance during intensive use while maintaining excellent sharpness.
Left-handed Yanagiba knives require specialized forging and sharpening processes due to their reversed geometry, resulting in lower production volume and higher craftsmanship requirements. This makes them significantly rarer and typically priced 30–50% higher than standard right-handed versions.
It is a right-handed single-bevel knife designed for professional use. The handle is made from Ebony wood with a Buffalo horn bolster, providing durability and a stable, traditional Japanese balance.
