7-Day Dry-Aged Madai (Red Sea Bream) represents the ideal balance between delicacy and depth. Revered in Japan as a symbol of celebration and good fortune, Madai (Pagrus major) is prized for its clean sweetness, firm flesh, and elegant umami - qualities that are elevated through short-term dry-aging.

Our store is one of only five places in the United States specializing in dry-aged fish, employing precise control of temperature, humidity, and airflow. Over 7 days, excess moisture is gently reduced while natural enzymes enhance flavor and texture, resulting in Madai that is more structured, slightly nutty, and beautifully expressive - without losing its signature lightness.

Available whole or as a carefully trimmed fillet, this dry-aged Madai is ideal for sashimi, nigiri, or refined cooked preparations.

Frequently Asked Questions (FAQ)

Q: How does dry-aged Madai differ from fresh Madai?

A: Dry-aged Madai has a firmer texture, clearer flavor definition, and enhanced umami without losing its delicate sweetness.

Q: Is it suitable for raw consumption?

A: Yes. When handled properly, it is ideal for sashimi and nigiri.

Q: Why only 7 days of aging?

A: Madai’s lean structure reaches optimal refinement at 7 days without overpowering its subtle profile.

Q: Can it be cooked?

A: Absolutely. It performs beautifully when lightly seared, steamed, or roasted.

Q: Can it be frozen?

A: Freezing is not recommended, as it diminishes the refined texture achieved through dry-aging.

7-Day Dry-Aged Madai is an expression of restraint, precision, and tradition - elegant, balanced, and unmistakably premium. A true showcase of how expert dry-aging can elevate one of Japan’s most revered fish.

Not a Users Guide
Format: Paperback
Although many readers may find this book useful, it describes a particular approach to Powerpoint. It is not anything like a comprehensive users guide.

Just linear
Format: Paperback
I appreciate that it helps to organize the chaos of information, but I just used the template verbatim with my manager and it did not go very well. He said this linear approach does not work anymore with high-level corporate audiences. They want to cut right to the chase and start to dig into the deep details. This layout with simple images, even if you just pull away the map and anchor slides, makes the storytelling too much like a story, not giving enough credit to the speed at which certain audiences can and do process data on a slide. It was an interesting exercise and I still think this linear layout works in some cases. Just not if you are trying to communicate business case or other C-suite type of information.
