Kandungan biji bunga matahari hampir 90% dari lemak pada biji bunga matahari adalah lemak yang baik, lemak tak jenuh. Biji bunga matahari juga mengandung lemak monosaturated yang membantu menurunkan kolesterol total dan kolesterol LDL (kolesterol jahat) sekaligus meningkatkan kolesterol HDL (kolesterol baik).
