Winemaker Stephen Cook focuses exclusively on Barossa Valley Shiraz, sourcing premium fruit from the renowned western ranges, an area known for producing bold, full-bodied wines with remarkable depth and aging potential. Each wine is made in small batches, individually numbered, and crafted to highlight the unique characteristics of the Valley’s diverse sub-regions.
d'Or is a home for the very special parcels of grapes from each vintage. The grapes may be from new and experimental suppliers or a blend of vineyards and sub regions. The 2021 is predominantly from the Greenock sub region but also includes lesser amounts from Ebenezer and Marannaga.
The grapes were fermented in small batches and after fermentation was matured in 50% new French oak for 20 months prior to bottling. The wine was then relesed after a further 12 months of bottle maturation. Minimal intervention is used in the winemaking process and there is minimal handling prior to bottling. The wine is not cold stabilised or filtered.
This wine will continue to mature until at least 2040. Only 800 bottles, each individually numbered.
Tasting Notes
"The d'Or shiraz is made from the most exceptional fruit of the stellar '21 vintage; the majority from the Wilksch vineyard in Greenock, with smaller parcels from Ebenezer and Marananga. Impossibly deep magenta/crimson with super pure blueberry, macerated satsuma plum and boysenberry fruits with hints of dark chocolate, vanilla bean, violets, pan juices, blueberry pie and chocolate bullets. Full bodied with head-spinning fruit density and purity, tannins just melting in the mouth and a core of blue and black fruits that just glide across the palate with some serious class." 97 Points - Halliday Wine Companion, Dave Brookes (2025).
