Rehydrated egg whites behave just like fresh whites, though they are naturally slightly less gelled in their uncooked state.

How to use Egg White Powder:
To reconstitute, simply mix 1 tbsp of powder with 2 tbsp of water to equal the white of one large fresh egg.
