Hand harvested and sorted, gently pressed and fermented separately in stainless steel. 24 months on the lees and an additional 6 months resting in bottle before release. Beautiful, crisp, and delicate. Delicate aromas of citrus and white flowers, gorgeous mousse and subtle mouthfeel. Fresh and delicious.
