Honoring the long-standing tradition of sparkling wines in the Bairrada region, Vadio has reimagined sparkling wine production by aging its base wines using the Solera method. This method, initiated in 2007, now incorporates 13 vintages into the solera, creating a wine of remarkable depth and complexity.

Crafted from Bical, Baga, and Cercial grapes, each variety is harvested individually during the cool morning hours, followed by gentle pressing of whole bunches. Fermentation occurs entirely in barrels, with the wine aging on the lees for approximately six months.

At the start of each year, around 30% of the solera batch is drawn off for bottling the sparkling wine. The solera is then replenished with wine from the most recent harvest, ensuring consistency and character year after year. Following the classic method, the second fermentation takes place in the bottle, with a minimum aging period of 18 months before disgorgement.

Vadio’s sparkling wine offers a complex and elegant aroma, reflecting its solera aging, with notes of dried fruits, candied fruit, and a subtle touch of salinity. On the palate, it is creamy and rich, with balanced acidity and profound depth.
